Celebration Of Local Gastronomy

While there are a variety of crops that grow well in our coastal rainforest, there is also a great deal of ignorance as to how to process and use them. One reason for this is related to the globalization of our food supply which made cooking with these local ingredients seem obsolete or backwards. Luckily we have elders in our Mercado Verde community who grew up cooking with and eating these crops and are able to translate their usage into a fusion cuisine of old and new. By creating this rhythm within the Mercado Verde of highlighting and celebrating local crops, our objective is to invite more people in the region to become familiar with and use them in their everyday lives.
